Herbs of Provence refer to a collection of aromatic plants that are typical of the Mediterranean basin. This group includes rosemary, thyme, oregano, savory, tarragon, sage, chervil, basil, wild thyme, marjoram, lovage, fennel, summer savory, and bay leaf.
There is no official standardization of the recipe for this spice blend, nor any Appellation d'Origine Protégée (Protected Designation of Origin) guaranteeing the uniqueness of the mixture, and all blends are considered equal.
However, there is a Label Rouge that specifies a precise composition of four herbs of Provence, according to the following proportions :
- 27% rosemary
- 27% oregano
- 27% savory
- 19% thyme
Herbs of Provence can be used in almost any type of cuisine, including grilled meats, salads, roast chicken, fish, ratatouille, vegetable sautés, and kebabs.
