The origin of fir honey

Honey has been coveted by humans since ancient times. This natural product is both nourishing and healing, and there are a multitude of varieties of honey with diverse origins. Fir honey is a rare and quite expensive product in France; it is typical and has benefited from a certified designation of origin since 1999.

It is important to know that the production of fir honey is very different from that usually carried out by bees for other honeys. As we know, the fir tree does not have flowers and therefore the bees do not have nectar to collect.

So how do bees produce fir honey?

On the fir tree, aphids produce a thick, viscous liquid substance called honeydew , which is then deposited on plants such as spruce and fir. Bees collect this honeydew, which is left behind by the aphids, to produce fir honey.

Fir honey production is truly profitable for beekeepers, lasting 3 to 6 years out of an average of 10 years. And that's why this honey is so rare.

However, fir honey has several characteristics :

  • First of all, it has a very dark color that varies depending on the region where it is harvested. Fir honey also has woody, pronounced, or even resinous aromas.
  • Its smell is very strong, it crystallizes very slowly and keeps very well.
  • To conclude, this honey is much less sweet than its peers. ( thyme honey , chestnut honey , etc.)
