100% natural, this "shepherds' honey" artisanally harvested in the White Mountains (Lefka Ori, 800–2500 m) of Crete offers a complex, pleasantly rounded flavor profile, with floral notes and hints of rose candy. Its dense texture with fine crystallization makes it very spreadable.

Rarity index 9/10: the constant decline of wild tea tree (malotira) populations in Crete makes it a true rarity, with a harvest that is often biennial or triennial. Unheated and jarred in Belgium.
